Ingredients


  • 3 tablespoons olive oil

  • 1 large fennel bulb (thinly sliced)

  • 1 small onion

  • 3 large shallots

  • 4 large garlic cloves

  • ¾ teaspoon dried crushed red pepper flakes

  • ¼ cup tomato paste

  • 1 (28-ounce) can diced tomato

  • 1 ½ cups dry white wine

  • 4 cups fish stock

  • 1 bay leaf

  • 8 pieces manila clams

  • 8 pieces mussels

  • 6 pieces shrimp

  • 400g Basa fish fillet

  • 3 tablespoon cornstarch

Cooking Process

Step 1
Put onion, shallots and garlic into the machine 15 seconds, turbo speed 6 to chop


Step 2
Add olive oil and fennel to sautéed for 5 minutes, 130°C, speed 1 reverse

Step 3
Pour in white wine, fish stock, red pepper flakes, tomato paste, can tomato and bay leaf to cook the stock for 15 minutes, 130°C, speed 1 reverse

Step 4
Put Basa fish and clams into the simmering basket and put mussels, shrimp onto the varoma to cook another 15 minutes, 130°C, speed 1 reverse

Step 5
Take all the seafood out, then add corn starch into the stock to thicken for 5 minutes, 110°C, speed 1 reverse

Step 6
Pour the stock into the seafood, then serve it
