Ingredients
3 small yellow onion
1 glove garlic
10 g of ginger (peel)
50 g butter
300 g boneless, skinless chicken thighs (cut in 4 cm cubes)
65 g of green curry paste
1 tbsp fish sauce
20 g of palm sugar
1 lime (juice only)
½ cup of eggplant (cut in 4 cm cubes)
60 g can bamboo
1 tbsp lemongrass powder
100 ml of water
200 ml of coconut milk
Cooking Process
Step 1
Put onion, garlic and ginger into the machine to chop for 15 seconds, speed 6
Step 2
Add butter to sautéed for 5 mins, 130 °C, speed 1 reverse
Step 3
Add chicken, curry paste, fish sauce, palm sugar, lime juice, eggplant, can bamboo, lemongrass powder and water to simmer for 30 mins, 100 °C, speed 1 reverse
Step 4
Add the snow pea and coconut milk to cook for 6 mins, 130 °C, speed 1 reverse
Step 5
Add salt and pepper for taste
